Ingredients
- 1/2 lb zucchini or 2 cups shredded
- 1 large carrot or 1/2 cup shredded
- 1/4 teaspoon pink Himalayan salt
- 1 cup cooked quinoa
- 2 eggs, lightly beaten
- 1 tablespoon chives, chopped
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/2 cup rolled oats
- 1/4 cup avocado oil, for frying
Directions
Combine the shredded zucchini, shredded carrot, and pink Himalayan salt in a large bowl. Let sit for 10 minutes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth
- Add the cooked quinoa, beaten eggs, chopped chives, paprika, black pepper, and rolled oats to the bowl. Mix well until all ingredients are evenly combined
- Form the mixture into small patties, about 2-3 inches in diameter
- Heat the avocado oil in a large skillet over medium heat
- Fry the patties in batches, cooking each side for about 3-4 minutes or until golden brown and cooked through
- Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil
- Serve warm with your favorite dipping sauce or a side salad

The Method: The recipe uses a shallow pan-fry with ¼ cup of approved avocado oil.
Why it’s “L2”: This is considered controlled fat (not deep-frying) and is often needed to give fritters the right texture so they don’t fall apart.
🔥 If you want to stick to zero-added-fat: Just skip the pan-fry! You can use an air fryer instead with a quick mist of oil spray.
