Ingredients
- 2 large fennel bulbs
- 2 tablespoons avocado oil
- Pink Himalayan salt, to taste
- Black pepper, to taste
- Optional: Fresh herbs like thyme or rosemary, chopped

Preheat your oven to 400°F
Trim the fronds and stems from the fennel bulbs. Cut each bulb in half lengthwise, then slice each half into wedges about 1/2 inch thick
Place the fennel wedges in a single layer on a baking sheet
Drizzle the avocado oil over the fennel wedges, then season with pink Himalayan salt and black pepper to taste. Toss to coat evenly
