Servings: 4 cups
Ingredients
- 4 large organic tomatoes Or 6 organic Roma tomatoes.
- 1 cup low sodium organic chicken broth Substitute low sodium organic vegetable broth.
- 6 oz organic tomato paste Muir Glen is good. No sugar or salt added.
- 1 Tbsp dried basil Substitute 2 Tbsp fresh chopped basil
- 1 tsp dried oregano
- 1 Tbsp onion Minced.
- 2 cloves fresh garlic Minced.
- ½ tsp Himalayan pink sea salt
- to taste ground black pepper
- to taste cayenne
Instructions
- Chop or puree tomatoes in a food processor.
- Add all ingredients in a saucepan, and cook on medium low for 30 minutes to an hour.
- Add additional broth or water if needed for thinning to desired consistency.
Notes
This recipe is great as a vegetable choice, but can be placed over chicken, beef, or fish. Can be frozen for later use.

This is simple and versatile. I used fresh basil instead of dried.
