Shrimp Scampi

Ingredients

  • 4 cloves garlic Minced.
  • ¼ cup low sodium organic vegetable broth
  • 1 lb extra large (26/30) shrimp Peeled except the tail and deveined.
  • 3 Tbsp lemon juice
  • tsp garlic powder
  • tsp onion powder
  • tsp chili powder
  • tsp Himalayan pink sea salt
  • to taste ground black pepper

Instructions

  • Over medium heat, sautée garlic in 2 Tbsp vegetable broth for 1 minute.
  • Add shrimp and all remaining ingredients.
  • Cook shrimp for 2 to 3 minutes per side, until it is pink and liquid is reduced.
  • Serve hot or cold with a salad, or on a bed of spinach or kale, or spiralized zucchini or cucumber.
