Fruit Roll-Ups
Ingredients:
2 c. strawberries
1 c. blueberries
(Fruit past it’s prime works great for this recipe!)
Directions:
Put strawberries and blueberries in a blender and make a sauce. Pour it onto a parchment lined baking pan, smoothing it into a thin, even layer and bake at 175-200° for 3-4 hours, or until they aren’t sticky anymore. It makes about 2 pans worth. Delicious!
Fruit Sorbet
Freeze 1-2 cups of strawberries, blueberries, or both! Put frozen berries in the food processor or blender with approximately 1-2 tbsp of water. Process until smooth, adding more water if needed. Add a few drops of stevia if desired.
‘Chocolate’ Strawberries
Drizzle chocolate stevia over frozen or fresh strawberries. Enjoy!
Baked Apples with Cinnamon
Ingredients:
1 apple half
Small lemon
1 tbsp water
1 tsp stevia
For Cinnamon Topping:
1 Melba toast
1 tsp milk
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp pumpkin pie spice
Directions:
Preheat oven to 400°. Peel, core, and slice/chop apple. Place apples in small baking dish. Cover with juice of 1/2 small lemon, stevia, water, and a few dashes of cinnamon. Toss to coat apples. Grind Melba toast into a powder using a food processor or coffee grinder. Add milk in 1/4 tsp increments. Slowly stir until mixture forms a slightly moist, crumbly topping. Sprinkle on top of apple filling. Cover dish and bake 20 minues. Remove cover and broil 1-2 mins to crisp topping. Serve immediately.
