Ingredients

  • 1 pound sirloin steak
  • 2 limes 1 juiced, 1 sliced for garnish.
  • ¼ cup fresh cilantro Roughly chopped.
  • 1 cup fresh spinach
  • ¾ cup cucumber Chopped.

Instructions

  • Place the steak into a sealable bag or a small, deep glass dish.
  • In another small bowl, mix the lime juice, salt and cilantro. Pour the mixture into the bag, making sure to coat the steak evenly.
  • Seal the bag, and put it back in the fridge to marinate (it is best to marinate the meat overnight, but it will be okay in 2 to 3 hours).
  • When you are ready to grill the steak turn grill to 140° F (Medium), add spinach and cucumbers to your salad bowl (you can add other vegetables that are on the level 1 food list, but we thought these vegetables would go particularly well with the steak).
  • Grill steak for 3-5 minutes each side, or until it has a little bit of pink on the inside. Do not overcook!
  • Cut the steak into bite sized cubes and add to the spinach and cucumber, garnishing with lime slices.
  • Enjoy!
