Ingredients

  • 2 cups soy milk Substitute coconut milk.
  • 3 egg whites
  • 5 to 8 drops liquid vanilla stevia
  • ¼ tsp ground cinnamon

Instructions

  • In a bowl, whisk egg whites with the stevia.
  • In a separate bowl, whisk milk.
  • Fold the egg mixture into the milk.
  • Pour into mugs and sprinkle with cinnamon.

What I love about this eggnog is that it’s packed with protein and has NO added sugar. It’s an amazing way to enjoy a Christmas classic without packing on the calories. With a few simple adjustments, you can turn this holiday comfort drink into a healing elixir. Here’s how.
First, let’s talk about soy. I personally love soy because it has added protein per serving. That begins said, there is a great controversy over the health properties of soy milk. We usually don’t promote it because so many people have an allergy to it and it’s difficult to find it non-gmo (genetically modified organisms). When the soy has been modified, your body can’t recognize it and will store is more likely to store it as fat instead of converting it to energy. However, I find that as an Asian-American, soy works just fine in my body. I LOVE the extra 7 grams of protein per serving. With the egg whites, that boosts this drink to a 24.8 grams! The best thing for most people is going to be unsweetened coconut milk. Coconut milk has MCT’s (Medium Chain Triglycerides) that play a role in encouraging the body to metabolize and burn fat. MCT’s are go straight to the liver, where it’s converted into energy like a carbohydrate instead of a fat.
