Caribbean Fish Curry

Ingredients

  • 2 lb. Fresh cod
  • 1/2 cup White onion, chopped
  • 2 cloves Garlic
  • 2 heads Bok choy
  • 2 Red bell peppers, diced
  • 1 large Tomato, chopped
  • 1 tsp. Curry powder
  • 1 tsp. Cumin
  • 1 can Diced tomatoes (15 oz.)
  • 1 can Coconut milk
  • 1 lime
  • 1 handful Cilantro
  • Pink Himalayan salt
  • Pepper
  • Olive oil

Instructions

  • Heat olive oil over medium heat.
  • Add onions and garlic until fragrant.
  • Add diced tomatoes, peppers and seasonings.
  • Pour in the can of tomatoes, increase heat to high and bring to a boil.
  • Add coconut milk and simmer for 10-15 mins.
  • Season fish with salt, pepper, and lime juice.
  • Place fish into the curry until it is cooked through.
  • Serve with lime and cilantro.
