Caribbean Fish Curry

Ingredients
- 2 lb. Fresh cod
- 1/2 cup White onion, chopped
- 2 cloves Garlic
- 2 heads Bok choy
- 2 Red bell peppers, diced
- 1 large Tomato, chopped
- 1 tsp. Curry powder
- 1 tsp. Cumin
- 1 can Diced tomatoes (15 oz.)
- 1 can Coconut milk
- 1 lime
- 1 handful Cilantro
- Pink Himalayan salt
- Pepper
- Olive oil
Instructions
- Heat olive oil over medium heat.
- Add onions and garlic until fragrant.
- Add diced tomatoes, peppers and seasonings.
- Pour in the can of tomatoes, increase heat to high and bring to a boil.
- Add coconut milk and simmer for 10-15 mins.
- Season fish with salt, pepper, and lime juice.
- Place fish into the curry until it is cooked through.
- Serve with lime and cilantro.
