Doc's Salad

Ingredients

  • 1 English cucumber Diced
  • 3 to 4 fresh tomatoes Diced
  • 2 to 3 bell peppers Diced
  • ½ red onion diced
  • 1 fresh lemon juiced
  • ½ tsp Himalayan pink sea salt

Instructions

  • Combine all of the vegetables in a large bowl.
  • Sprinkle salt and lemon juice over all.
  • Mix thoroughly and enjoy!

Notes

Level 1 vegetarian. Eat this on its own or spoon it over greens, chicken, or fish. The liquid that sweats out is delicious… use it! It makes a great dressing. Feel free to experiment with flavors like hot peppers or fresh herbs. The only rule to making this amazing salad is to finely dice the ingredients, so you can get the full flavor of each ingredient in every bite.

    I added some extra herbs like fresh parsley, or basil, fresh ground black pepper and crushed garlic. Substituted grape tomatoes and did a larger slice on the veggies. Makes an amazing side salad with the orange chicken.
