Green Lentil Quinoa Salad

Ingredients

  • ½ cup green lentils cooked
  • ½ cup quinoa cooked
  • 1 English cucumber (or 3-4 Persian cucumbers) peeled, if desired, and diced
  • 1 red bell pepper diced
  • ½ bunch cilantro coarsely chopped
  • 1 lemon juice the lemon and discard the fruit
  • 2 Tbsp olive oil
  • to taste Himalayan pink sea salt

Instructions

  • Add all ingredients to a bowl and toss.
