Ingredients
- ½ cup green lentils cooked
- ½ cup quinoa cooked
- 1 English cucumber (or 3-4 Persian cucumbers) peeled, if desired, and diced
- 1 red bell pepper diced
- ½ bunch cilantro coarsely chopped
- 1 lemon juice the lemon and discard the fruit
- 2 Tbsp olive oil
- to taste Himalayan pink sea salt
Instructions
- Add all ingredients to a bowl and toss.
