Curry Apple Chicken Salad

Ingredients

  • 1 lb rotisserie chicken Shredded, skin removed.
  • 1 each granny smith apple (or other tart variety) Diced.
  • ½ medium red onion Diced.
  • 1 stalk celery Diced.
  • 1 to 2 cloves fresh garlic Minced.
  • ½ tsp curry powder
  • 3 Tbsp fresh lemon juice
  • ¼ tsp ground black pepper
  • ¼ tsp Himalayan pink sea salt
  • 2 cups organic greens Substitute 3-4 large romaine or bibb lettuce leaves for wraps.

Instructions

  • Combine all ingredients, except organic greens, in a bowl and mix well.
  • Serve over a bed of organic greens or wrapped in romaine or bibb lettuce.
