Betr Baked Meatloaf

Ingredients

  • ½ white or yellow onion Chopped or minced.
  • ¼ cup organic low sodium beef broth or water
  • ½ red bell pepper (optional) Chopped.
  • 3 cloves fresh garlic Minced.
  • ¼ tsp ground black pepper
  • ½ tsp Himalayan pink sea salt
  • 1 tsp ground thyme
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 lb organic grass fed ground beef or ground chuck
  • 1 egg
  • 4 plain melba toast crackers (optional) Finely crushed.
  • 8 oz tomato sauce with garlic and herbs (no salt or sugar added). You can substitute plain tomato sauce and mix in ¼ tsp each of dried thyme, basil, oregano and garlic powder.

Instructions

  • Preheat oven or air fryer to 350°.
  • Add broth or water to a skillet or frying pan over medium heat. Saute the onion, bell pepper (if used), garlic, salt, pepper, thyme, basil and oregano with the broth/water for about 10 minutes or until the liquid has evaporated. Remove from heat and cool to room temperature.
  • While the onion mixture is cooling, cover a jelly roll pan or other rimmed baking sheet with aluminum foil and lightly mist with olive oil (non-aerosol).
  • In a medium sized bowl, combine beef, egg, onion mixture, ½ of the tomato sauce and melba toast crumbs (if using).
  • Mix well and form into one large or two smaller loaves and place on the foil line pan.
  • Top loaves (loaf) with the remaining tomato sauce and place in the oven for about 35 minutes. Remove from oven and serve.

    I made it with Betr marinara sauce instead of tomato sauce…..it was moist and delicious!
