LEVEL 1

Spicy Lemon Olive Oil Dressing

Ingredients

  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 tablespoons white wine vinegar
  • 1/4 – 1/2 teaspoon red pepper flakes
  • Salt & pepper to taste

Directions

Whisk together all the ingredients until combined. Store in the fridge and shake before using!

Tomato Vinaigrette

Ingredients

  •  ½ cup apple cider vinegar
  •  2 medium size vine ripened tomatoes cut into quarters
  •  1 clove garlic minced
  •  ¾ cup avocado or olive oil
  •  1/2 tsp salt
  •  1/3 tsp black pepper

Directions

Begin by placing tomato, vinegar, and garlic into a high powered blender or food processor. Blend for about 30 seconds to 1 minute, or until dressing begins to get smooth.  While motor is running, slowly pour in oil. Sprinkle in salt and pepper. Continue to blend until no chunks of tomato remain.

Greek Olive Oil Dressing

Ingredients

  • ½ cup extra-virgin olive oil
  • 3 tablespoons vinegar of choice (apple cider vinegar or 
  • 1 tablespoon mustard (whole foods 365 dijon mustard)
  • 1 tablespoon honey (max)
  • 2 medium cloves garlic, minced
  • ¼ teaspoon himalayan salt, to taste
  • Black pepper, to taste
  • 1-2 tablespoon(s) dried Oregano
  • Red pepper flakes (optional)

Directions

Combine ingredients in a medium mixing bowl. Stir well with a small whisk or a fork until the ingredients are combined. Taste, and adjust as needed. Serve immediately, or cover and refrigerate. If refrigerated, shake or stir before using.

LEVEL 2

Cashew Vegan Ranch Dressing

Ingredients

  • 1/4 cup raw cashews, soaked at least 30 mins in hot water
  • 1 tablespoon nutritional yeast
  • 1 teaspoon capers
  • 3/4 teaspoon caper juice
  • 1/2 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/3 – 1/2 cup water
  • Salt + pepper to taste

Directions

Drain and rinse the cashews then add them to a blender along with the remaining ingredients (starting with 1/3 cup water). Blend on high until smooth and creamy, adding additional water until you’ve reached your desired consistency.

Spicy Thai Almond Butter Dressing

Ingredients

  • 1/4 cup creamy almond butter
  • Juice of 1 whole lime
  • 1 tablespoon rice vinegar
  • 1 teaspoon Bragg’s liquid aminos
  • 1 teaspoon Siete hot sauce (or more as desired)
  • 1/2 teaspoon ground ginger
  • Water as needed

Directions

Whisk together all the ingredients until smooth. Stir in water, 1 tablespoon at a time until you’ve reached your desired consistency.

Basil Walnut Dressing

Ingredients

  • 1 cup loosely packed basil leaves
  • ½ cup walnuts
  • ¼ cup olive oil
  • ¼ cup nutritional yeast
  • 3 tablespoons lemon juice (about 1 lemon)
  • 1 clove garlic
  • ¼ teaspoon salt
  • 2-4 tablespoons water

Directions

Add all of the ingredients plus 2 tablespoons of water to a food processor or blender. Blend until smooth. If it needs a bit more water add a tablespoon at a time until you’ve reached your desired consistency.

Pumpkin Vinaigrette

Ingredients

  •  1/2 cup olive oil
  •  1/3 cup apple cider vinegar
  •  1/4 cup canned pumpkin
  •  2 tsp maple syrup
  •  2 crushed cloves garlic
  •  1 tbsp chopped fresh ginger
  •  1 tbsp freshly chopped sage
  •  1/4 cup raw unsalted pumpkin seeds
  •  1 tsp cumin
  •  1/2 tsp pumpkin pie spice
  •  1/2 tsp pink salt

Directions

Place all ingredients into a food processor or blender. Pulse until smooth, add more salt to taste if needed.

Recipe Notes

*If you prefer a more tangy dressing, use 1/2 cup vinegar to 1/2 cup oil.

Creamy Avocado Dressing

Ingredients

  •  1 avocado
  •  2 cloves of garlic
  •  2 tbsp apple cider vinegar
  •  1/2 cup olive oil
  •  1/4 cup raw unsalted pumpkin seeds
  •  1 tsp cumin
  •  1/4 cup lime juice
  •  1/4 cup chopped fresh cilantro
  •  1/2 cup water
  •  1/2 tsp pink salt

Directions

Place all ingredients into a food processor or blender, and pulse until smooth (about 30 seconds).  This dressing will be thick and can be used as a dip. Add more water for a runnier consistency (another 1/4- 1/2 cup).

Note:  This dressing will only keep fresh for about 2 days in the fridge.
