Tuna Avocado Lemon Zucchini

A great level 2 lunch or dinner option! Quick and easy to make.

Ingredients

  • 1 Zucchini
  • 1/2 Avocado
  • 1/2 Lemon
  • 2 Leaves Kale (finely chopped)
  • 1 Tomato (finely chopped)
  • 1 12 oz. can Wild Caught Organic Tuna
  • 1/8 tsp. Coriander
  • 1/8 tsp. Salt

Instructions

  • Spiralize the zucchini 
  • Cut the avocado into slices and squeeze the lemon juice on top. Add the in the tomato, tuna, kale, coriander and salt. 
  • Add in the sauce with the zucchini noodles and enjoy 🙂
