Ingredients
- 4 pieces whole wheat Melba toast Daily allotment is 1 piece. For those who are on a gluten-free diet, we recommend either crackers by Yehuda or Edward & Sons (both brands can be found at your local Whole Foods).
- 4 large tomatoes Diced.
- 10 fresh basil leaves Chopped. Substitute with 2 tsp dried basil.
- ¼ medium red onion Finely diced.
- 1 clove fresh garlic Minced.
- ¼ tsp Himalayan pink sea salt
- ¼ tsp ground black pepper
- ½ lemon Juiced.
- ⅛ cup apple cider vinegar
Instructions
- Chop desired quantity of tomatoes and mix with spices, lemon juice and vinegar. Set mixture in the refrigerator and let sit for 1 hour.
- Spread bruschetta on Melba toast (1 piece per serving), or enjoy as a side vegetable dish. Refrigerate leftovers for up to 3 days.
