Pumpkin Vinaigrette
Ingredients
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 1/4 cup canned pumpkin
- 2 tsp maple syrup
- 2 cloves garlic, crushed
- 1 tbsp freshly chopped sage
- 1/4 cup raw unsalted pumpkin seeds
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
Instructions
- Place all ingredients into a food processor or blender. Pulse until smooth, add more salt to taste if needed.
Notes
*If you prefer a more tangy dressing, use 1/2 cup vinegar to 1/2 cup oil.
