Pumpkin Vinaigrette

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/4 cup canned pumpkin
  • 2 tsp maple syrup
  • 2 cloves garlic, crushed
  • 1 tbsp freshly chopped sage
  • 1/4 cup raw unsalted pumpkin seeds
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt

Instructions

  • Place all ingredients into a food processor or blender. Pulse until smooth, add more salt to taste if needed.

Notes

*If you prefer a more tangy dressing, use 1/2 cup vinegar to 1/2 cup oil.
