Sicilian Citrus Salad

Ingredients

Citrus Vinaigrette

  • 4 Tbsp avocado oil
  • 1 orange Juiced.
  • 1 lemon Juiced.
  • ¼ tsp Himalayan pink sea salt
  • tsp ground black pepper

Salad

  • 1 grapefruit Peeled and sliced.
  • 2 blood orange Peeled and sliced.
  • 1 orange Peeled and sliced.
  • ½ fennel Sliced.
  • 2 stalks celery Chopped
  • 3 Tbsp hemp seeds

Instructions

  • Make the vinaigrette: Whisk together avocado oil, orange juice, lemon juice, salt and pepper and set aside.
  • Toss grapefruit, blood orange, and orange in a bowl.
  • Add the fennel and celery.
  • Drizzle on vinaigrette and hemp seeds. Mix, and enjoy!

Notes

Health Coach Tips:
For fat-burning purposes if you are following level 1 very closely, this may be too much fruit in one serving. It’s a great snack or side dish to a big leafy green salad!
