Ingredients
- 2 Tbsp lemon juice freshly squeezed (Add another Tbsp for a bit more zip)
- 2 Tbsp organic Dijon mustard
- ½ tsp Himalayan pink sea salt
- ½ to 1 tsp organic honey Start with ½ tsp and adjust upward from there according to your taste.
- 5 Tbsp extra virgin olive oil
- 1 lb organic carrots Washed, peeled and grated into large shreds. A food processor does this quickly.
- 1 tsp dried parsley
Instructions
- Mix all ingredients in a large bowl until carrots are well coated. Adjust seasonings as desired.
