Summer Shredded Carrot Salad

Ingredients

  • 2 Tbsp lemon juice freshly squeezed (Add another Tbsp for a bit more zip)
  • 2 Tbsp organic Dijon mustard
  • ½ tsp Himalayan pink sea salt
  • ½ to 1 tsp organic honey Start with ½ tsp and adjust upward from there according to your taste.
  • 5 Tbsp extra virgin olive oil
  • 1 lb organic carrots Washed, peeled and grated into large shreds. A food processor does this quickly.
  • 1 tsp dried parsley

Instructions

  • Mix all ingredients in a large bowl until carrots are well coated. Adjust seasonings as desired.
