Vegan Taco Wrap

Ingredients

  • 6 large greens leaves Leaf lettuce and Swiss chard work well.

Taco "Meat"

  • 1 ½ to 2 cups raw walnuts Soak in water for 3 hours and then drain well.
  • 2 tsp liquid amino acids
  • 2 tsp extra virgin olive oil
  • ¼ tsp Himalayan pink sea salt
  • 1 dash ground black pepper
  • ½ tsp ground cumin
  • ½ tsp chili powder

Toppings - these are all optional depending on what you like on your taco.

  • 1 large avocado (Level 2 only after successful reintroduction of avocado) sliced
  • 1 medium tomato diced
  • ½ bell pepper sliced
  • ½ medium red or yellow onion diced
  • ½ medium fresh jalapeno diced

Instructions

  • Combine walnuts, aminos, oil, and spices in a food processor and pulse until the "meat" mixture is well-combined but is still chunky, resembling taco meat.
  • Scoop two large spoonfuls down the center of each leafy green.
  • Add desired toppings, wrap the leaf around the filling, and pin closed with a toothpick.
